Something else to do with the pumpkin that comes in the veg box. :)

Okay, here goes:

the flesh of one medium sized pie pumpkin (don't dredge out too deeply, the flesh near the seeds is sweetest)
can of evaporated milk
3/4 cup sugar
2 tsp cinnamon
1/2 tsp salt
1 tsp ginger
2 eggs

Combine everything. Pour into disposable or reusable cupcake liners. (If using disposable, treble the thickness as it will disintegrate them otherwise.)

Cover with crumble topping. I used a mix from the supermarket this time, but other wise 3T butter, 3T sugar, and 1c flour. Add more sugar if you want it sweeter.

Bake until toothpick comes out clean. I think it was about 25 minutes.
